Friday Faves #19-The Best Road Trip Foods!

     My husband and I just got home from our two and one half week road trip through CA, UT, back to AZ through NM, TX, OK and into KS.  We went to see kids graduate with upper level degrees and to see a kindergarten graduation.  We saw our too far away grandchildren and had a great time traveling together!  It was a lot of fun and exhausting!  
     When we travel by car, in order to avoid travel stomach problems, it is important to watch our diets and to realize that we aren't burning a bunch of calories just sitting in the car driving or sleeping! When we used to travel with kids, we also had to remember to keep them fed and happy with things they would enjoy.  We also didn't want to spend a ton of money. It all definitely takes some pre-planning and preparation!  Over the years, we have come up with some favorite foods that we like to bring along on road trips!
What are your favorite road trip snacks?
     Years ago, my friend Kelly, who lives in Massachusetts, gave me a soft-side cooler that is perfect for traveling in the car with us.  I love it and we use it all of the time now when we travel.  (Until this trip when we couldn't find it and I think someone has borrowed it and failed to return it. I really missed it.) The soft side cooler is the perfect size to hold cold drinks like water, juices, soda and the one we have has enough space for a few snacks that need to stay cool.  It keeps everything organized and easily accessible.  Between that cooler and the deep center console in our car, we were able to keep all of the snacks close to me and easy to hand out.  Here are a couple of similar options.   
     And, now for the food choices! 
#1:  Lindsey never drinks soda, but on road trips she will break that rule because when she drives a little caffeinated soda keeps her awake.  I am the same way.  On the other hand, if you are driving with kids, you probably like them to sleep! So juice, water, and Gatorade are important to bring along.  Everyone needs to stay hydrated to help avoid stomach problems.  Alicia says Gatorade is something she likes to travel with. The idea of avoiding stopping for bathroom breaks by not drinking much is not really a good one.  Kids suffering with constipation is worse than stopping to let them go to the bathroom.  Plus, a good stretch of the legs is good for everyone as well.   
#2:  Alicia says she loves beef jerky for road trips because it is delicious and savory.  I think jerky is a good travel food as well because it isn't very messy and doesn't need to be kept cold.  It can be eaten slowly instead of quickly gobbled down.  Here is an exotic jerky assortment that would be fun to try as a treat on a road trip or to give as a gift to your jerky loving family member or friend!
#3:  Fresh fruits and veggies are always a hit with my husband and I.  This last trip I brought quartered strawberries and sectioned oranges and we gobbled them down.  Then I picked up a package of apple slices, baby carrots and peas for the way home and they were consumed while I slept! :(  These healthy snacks are easy to prepare at home and package into either Ziploc bags or into small containers.  They are inexpensive and really refreshing to eat during the trip.

#4:  I rarely splurge on cheese sticks because they seem so expensive.  But, for our road trips, they are a special treat.  Kids love them, they are healthy and satisfying and they fit nicely in the cooler.  Along with cheese sticks, I always get crackers or Pringles or Lays Stacks.  I like those types of chips in the tubes for traveling because they don't get crushed so easily, the tubes stand nicely in the center console of our car and when they are empty, I can shove trash in them without it taking up a lot of space.  When my husband is driving, I can set a stack of them on his lap as he drives for him to snack on.  It all works out great.  He likes the original chip flavors, but I love the varied flavors.  Sometimes something a little salty and crunchy is what you need when you are driving along. 

#5:  Of course, one or two sweet things are in order when you take a road trip!  Maddy says that she loved it when we would get those Honey Buns that Little Debbie makes.  Homemade cookies packed along are always good to have, or if you must, the packaged variety.  We ate some packaged ones this time that I am thinking of making a homemade version of that will be so much better!  (Stay tuned for that!) And finally, there has to be some kind of chocolate to keep me (and possibly everyone) happy!  We like to buy Hershey Miniatures because then there is a variety for every taste. Who knew you could get them on Amazon Prime?  
    Those are our faves!  And just a couple of other travel tips:
*We try to get hotels that serve breakfast! We make note of the ones with the best breakfasts.  It is good to start the day with a good breakfast that will carry you through the day as you live on snacks.  Even less expensive hotels will offer breakfasts now-a-days, so this is very budget friendly.
*When you stop for the evening, go and get a healthy meal.  It doesn't have to be heavy.  I ate a lot of salad bar offerings and soups.  Everyone will sleep better if you eat something satisfying after the long drive, plus it is fun to go to a local diner or restaurant and just relax and enjoy the town you are in and one another's company.  Some of our favorites this trip were Settebello in Salt Lake City, a local diner we ate in while in Panguitch, UT, and Braums in Winfield, KS.
*When you travel with kids, it is great to give them little surprises along the way to bust the boredom of driving.  My grandchildren are going to be traveling a long way this summer, so I decided to give them each some little packages to open along the way to help keep them occupied and happy.

Renny's Recipes French Edition!

     Since Lindsey and Austin have been in France and Switzerland for almost 2 weeks now, they have been having a ton of fabulous food experiences!   Here is a slide show of some of the photos they have sent:

     I may not be in France, but I got to get in on the French food fun yesterday because my son needed some Pots de Creme for his AP French class party.  What a simple yet extremely delicious recipe.  I found the recipe on Food Network and tweaked it a little for my needs.

      Pots de Creme are a very chocolaty custard pudding that are traditionally served in little pots.  Thus, the word "Pots".  Since my little pots needed to be disposable, I went to the Dollar Tree to see what I could find.  I found these great little 4 oz. bowls that are actually the perfect size.  They come 12 in a pack, which was precisely the amount I needed! So, $1.00 for all 12! You can order them online just 4 units of 12 at a time! They would be great for a wedding or bridal shower.  And, if you need a lot, you can order them and have them sent directly to your Dollar Tree for free shipping!  You can click on the link here or on the photo to order.  I also picked up some plastic spoons.  There are 48 spoons in a bag and you can order a minimum of 6 bags at a time.  That is $6.00 for more spoons than you can shake a stick at! (or a spoon!)

Pots de Creme
Click the button for the recipe.  Click the pictures below for a few tips on the recipe.  This recipe gave me a chance to use my new blender once again.  I am continuing to love it, by the way! I wrote about it here.
This is how the custard looks as you begin to cook it in the saucepan. I am using a bamboo spatula to stir so I won't scratch my pot.
As it cooks, the custard will thicken somewhat and it will coat the spoon or spatula like this.
Have the chocolate ready in the blender and then pour the hot mixture over it when you are ready to blend.

It didn't take long to get a nice thick chocolate mixture to pour into my little pots. This one has already cooled. It is so creamy and delicious. Now it just needs a little pizzazz!

     I hope my son's class loved them!  I may have to make some more.  Looking at them is making me hungry!

In my life I have been very blessed to have a wonderful mother. She has taught me so many things, some she might not even remember. She has helped significantly to shape me into the person I am today.
She taught me charity through her example. I would see how she was always willing to help those around her, even when it meant she had to go out of her way. She was always willing to give people the benefit of the doubt when others have weird habits or are seen as awkward to most people. She tried to befriend the outcasts and the seemingly forgotten. And it is because of my mother that I know how important visiting teaching is.

She taught me forgiveness. I think a mother has to be the third most forgiving person to exist. After Heavenly Father and Christ. Children put their mothers through a lot. And my mom has 6 kids! That's a lot of crap to wade through. I have witnessed my siblings and myself make my mother cry but she always comes back loving us more than ever. Outside of our family, I've seen people say dumb things to my mother that others may find offensive, but she forgives. It has helped me to learn to be more forgiving.

My mother also taught me how to have fun. Every time my family gets together it is fun. We laugh, sing, and play games. We make things (check out this blog) and try new things together. Once my mom took me to try a sushi burrito because it was something new!
My mother taught me how to work. Success isn't just handed to you, you have to work for it. This is what my mother instilled in me. My mother works hard at everything she does, because she understands doing something halfway is almost worse than not doing it at all. Your work is a reflection of you.
She taught me service. Similar to charity I have seen my mother serve throughout her whole life. She sacrificed for her family. When I had my baby, my mom came and spent months without my father to help me as I worked on my master's program and my husband moved to California for an internship. I am forever grateful.

Now that I am a mother, I hope I can pass on these traits to my children. I love you mom!

Friday Faves: Favorite Pizza

Hey Alicia here doing Friday Faves while my parents are traveling for different graduations across the country.

So in case you missed it in my mom's last post about Adorable Baby Gifts, my family revealed that we are expecting another baby this fall (a girl)!

We chose to reveal we're having a baby girl with pizza because we LOVE pizza. It's just the perfect vehicle for getting deliciousness into your mouth. And the topping possibilities are endless. So that made me think of this week's question for Friday Faves: What's your favorite pizza?
My mom chose Papa Murphy's Chicken Alfredo pizza with spinach and sun dried tomatoes. She loves it because it's garlicky and so tasty. It makes her mouth water just thinking about it. And she (and I too) love how generous Papa Murphy's is with their toppings. Hopefully you have a Papa Murphy's near you so you can try it out. This is my favorite of their pizzas too!
When we were young, I remember that Lindsey liked sausage pizza. So, I wasn't surprised when she said her favorite pizza is meat pizza. She says she loves the marriage of the flavors of the different types of meats. "It's so delicious and if you're going to eat pizza it should be as delicious as possible."
Madalynn was next. Never one to shy away from controversy, she chose pineapple pizza. She says she loves it because it's so juicy and sweet and goes well with both vegetables and meat. My husband agrees for his favorite pizza to order is pineapple with bacon.

Not strictly just a meat pizza but it does have sausage and salame. I had to get a pizza for lunch after writing this post.

I decided that I get to pick two pizzas because I love pizza so much and can eat it everyday for every meal. My first pick is Red Baron Classic Crust Special Deluxe Pizza. It is usually less than $4/pizza. Plus it's pretty delicious. I like how the crust gets crispy but not too crunchy. It has lots of toppings: pepperonis, sausage, onions, peppers, mushrooms, and olives. I also love how the sauce is slightly spicy. We seriously probably eat this at least once a week. It's a great value.
My second choice and my favorite is real Italian brick oven pizza from a place in Salt Lake City called Settebello. They actually have 8 locations across California, Nevada, and Utah. It is so good. And it gets the seal of approval from real Italians! My sister in law's mother is from Italy and she loves this place. The way they are cooked makes the crust perfectly chewy. The toppings are so fresh and delicious. My husband and brother both love to get lots of extra prosciutto crudo on top. I like it too. If you haven't tried brick oven Italian pizza you need to. NEED TO!

Bonus: I also love to make pizza at home from scratch. and we have written a few pizza related posts here at 3 Winks. Check out how to make Pizza Pot Pie, or Renny's Cauliflower Crust Pizza. You can also just use the pizza crust recipe my mom loves from the Pizza Pot Pie post to make your own pizza's or calzones. I like to mix my dough up in my bread maker. It is so easy and only takes me 5 minutes of prep time. I have the Oster 2-Pound Expressbake Bread Machine. I love how easy it is to clean and use. You can make bread, dough and jam!
