When I was a young mother, I loved getting handmade gifts like receiving blankets, quilts, and afghans. They were always so sweet and personal, plus the store blankets never seemed large enough or warm enough.
Lately, there have been a lot of young mothers around me having babies and I decided to make the newest little girl on the way a receiving blanket and matching burp cloth. Those are two things you can never have enough of!

I think we can all agree that when it comes to dessert, cookies and brownies are tied for first. Mainly because it's so easy to eat ten of them without feeling like you've done a bad thing. (I don't have this same experience with cake.) The other day, my brother brought home a cookie dough marbled brownie a.k.a. probably the best invention ever. It's literally a cookie and a brownie marbled together. So I thought, "Wow. I really want to make one of those." But then I also thought, "Wow. I really don't want to have to make two doughs." So I decided I would make a brownie that just tastes like cookie dough! So, second best invention ever!
I just took a regular brownie recipe and modified it, both for veganness and cookie doughness. Modifying recipes is always fun. Sometimes disgusting, but always fun. Luckily, this modification adventure did not turn out disgusting! And it was super quick and easy to make. The hardest part was waiting for the dang thing to bake. (Seriously, I hated it.)

After a long day at work, there's nothing I look forward to less than coming home and having to make myself dinner. I will seriously just skip out on eating because of this some days. I'm just so exhausted that the idea of having to slave away at the stove just doesn't seem worth it. And I'm sure I'm not the only one who feels this way, which is why for this Friday Fave we will be sharing our favorite, super simple recipes. 1. Oatmeal Oatmeal is a classic breakfast food, full of warmth and comfort. Lindsey chose this because it is healthy and pretty much mess free. You can make it all in one pot! And there are sooo many different options for toppings. If you're making it on the stove, you can throw in frozen fruit to add color and flavor. Some of my favorite toppings include peanut butter, brown sugar and apples, and honey. 2. Eggs Another breakfast food perfect for any time of the day and incredibly easy to whip up. Scrambled or fried, just add some potatoes and onions on the side and you have a full meal done in five minutes! My mom also likes to enjoy eggs with some toast and homemade jam on the side. Yummy! 3. Vegan Fried Rice I make this at least once a month because of how easy it is. And not only is it easy, it makes a lot, so I can portion it out and save it for future use. I start by browning some chopped onions, then add corn, black beans, carrots, broccoli, and really just any veggies you want or have on hand. Canned and frozen work perfect for this. After adding the veggies you add some cooked rice, soy sauce, and maple syrup. Everything is to taste and it tastes delicious! 4. Poor College Student's Special This is a recipe Alicia is sharing with us (I'm assuming from her college days). In a skillet, combine canned diced tomatoes and canned black beans. Add chili powder, garlic powder, salt and pepper, and onion powder to taste. And if you want to be extra fancy, you can add a chopped chicken breast. Your family and friends will all be so impressed by this dish they won't be able to believe how low effort it was. 5. Tacos! Fish, chicken, beef, tofu ... seriously just choose one and throw it in a skillet with some garlic, onions, and cumin. Put it in a tortilla and pile on the lettuce, sour cream, and salsa. Have some rice with lime and cilantro on the side and you're good to go! Minimal effort, maximum enjoyment. Tacos are a comfort food for me, so that's a bonus as well. Plus they're so customizable! Perfect for family dinners with picky little eaters. I hope that this post has given you some inspiration. It definitely gave me some! Friends, I made a chicken dish this week to share with you. It involved marinating chicken thighs and then baking those chicken thighs the next day. The chicken was juicy and delicious. It was an Indian style dish involving masala. Then I realized that today is May 4, making tomorrow May 5. I have a few options here. Today is Star Wars Day (May the 4th be with you). So I could share with you a Star Wars Dish, but what would that even be? Something you could pick up in a cantina while Hans Solo is killing creatures over in the corner? Or, I could go with a Mexican dish in honor of tomorrow being Cinco de Mayo. Cinco de Mayo is kind of a big deal here in AZ, being so close to the border and all. Plus it seems like most people use it as an excuse to drink. Well, we don't drink alcohol, so we'd only be focusing on the food aspect of it. However, I am going to be real with you. Tomorrow PH and I are getting on a plane and flying to France. France! I love that place so much and I am getting all teary eyed thinking about going back. We're going back! So my recipes are going to be MIA for the next few weeks because I am going to be out of the country. When I get back you can be expecting some French recipes from me, because I'll just want to keep reliving our trip. PH is threatening to eat Steak Tartare while we are there, so after I nurse him back to life I'll be making much better French food options.
