Chicken And Rice with Pumpkin Sauce

       I first came up with this pumpkin sauce recipe back in 2018.  Then, because in 2025, my garden produced so many volunteer pumpkins, we have gone back and revisited some of our pumpkin recipes here on the blog. You may have seen our first Pumpkin Recipe reel that we made for our Pumpkin Sausage Soup here!  This Chicken and Rice with Pumpkin Sauce Recipe really needed an update!  It was originally written as a baked chicken recipe with a pumpkin sauce. So many other pumpkin sauce recipes that you find online still include tomatoes, this one does not.   Back when I came up with this recipe, I didn't even realize that so many people were worried about eating nightshade vegetables, like tomatoes.  This recipe is perfect for them, so I decided to update this recipe and the blog post to make it more relevant for today! 

•  First of all, if you want to bake chicken with this sauce poured over it, that is still a very delicious way to use this sauce.  You could also use it with other proteins besides chicken! 
•  Second of all, in our video below, I used milk and sour cream in this version of the recipe, but you can easily substitute a different milk, such as almond milk and a non-dairy yogurt for the sour cream.
• I feel like sometimes my sauce gets a bit too thick, when this happens, you can add a little more milk to get the consistency that you like.  
• Maddy brought me some Mango Balsamic Vinegar from Germany that I used in my recipe to give it a bit of tang!  If you can find some, it is delicious! Or, experiment with some other kind of balsamic!  

       Back in August, I gave you the recipe for shredded chicken that you make in the Instant Pot.  I have a supply of that chicken frozen in my freezer in 2 cup portions and it is perfect for making a quick dinner with this sauce! 

Just make the sauce and then stir it in!

     

      The sauce is so easy to make up in one pot, and cook some rice to spoon it over and you will have yourself a nutritious and delicious meal!
