Sometimes, when I think about that fact that my mom made us a home cooked meal for dinner almost every night of my childhood (and sometimes even now) my mind is blown. Thinking up and making something for dinner every night is the hardest part of adulting, I believe.
For me, simplicity is the name of the game. That is why I like this recipe for smoked paprika chicken thighs so much. It's simple, requires very few dishes, and the best part? It tastes so yummy! As you can see from my photo collage, I paired my smoked paprika chicken thighs with rice, corn, and strawberries. (Colorful dinner plates are the name of the game guys.) You can mix it up however you like. PH loves chicken and rice and Friday was his birthday, so I thought these smoked paprika chicken thighs would be a great and tasty variation on a theme. I was right. The chicken thighs were moist and flavorful. So, without further ado, here is your recipe for smoked paprika baked chicken thighs so you can have something to make for dinner tonight.
Smoked Paprika Chicken Thighs
This quick and easy dinner is sure to be a big hit with your family Ingredients:1 pound Bone in, skin on chicken thighs 1 ½ TBSP Smoked Paprika 1 TBSP Garlic powder 2 TSP Onion powder 2 TSP Salt 1 ½ TSP Black Pepper 2 TBSP Extra Virgin Olive Oil Directions:Preheat oven to 450 degrees Fahrenheit Mix together all spices and oil in a large sealable bag Add chicken to bag and seal Toss chicken until coated. Use fingers to rub in spice mix to the chicken. Place chicken in a baking dish Bake in the oven covered for 45 minutes and uncovered for an additional 15 minutes until the internal temperature reaches 165 degrees. Remove from oven and serve with a side of rice and your favorite veggies.

Hey everyone! I hope you all had a fun and safe Halloween! It was a very busy week for us last week, which made it difficult to post. This year our little one was more into Halloween. We let her choose her costume, and she decorated her own pumpkin. We went to two Trunk Or Treats where she got very good at saying, "Trick or Treat!" and "Thank you!" and also, very good at asking us for candy.
I've never really been into Halloween, but it is a lot more fun when you have a little kid who gets excited to paint her "pumpin" and be "a bu'erfly for Ha'oween!" She was a super cute butterfly as well!
This last Saturday we also participated in a Walk to End Alzheimer's. Both PH and I have been personally affected by this terrible illness. I watched my grandmother deteriorate for years and years (and there were many years before my time as well). PH's father passed away this last May due to complications from Alzheimer's. Anyway, with all of these goings on, finding time to make dinner can be really difficult. Additionally, with the greater influx of candy and treats at this time of year, finding time to make a HEALTHY meal is so important! This is why I love sheet pan meals! We have shared with you other sheet pan meals in the past. Sheet pan meals are really the most convenient way to pack in the most in a small amount of time.
I think sheet pan meals call for less clean up as well. One pan, throw all the ingredients on. Season on the pan. Way less mess! Well, this sheet pan meal is even more convenient because I cheated. Remember that whole lack of time thing? Well, nearly everything on this sheet pan was prepackaged. My daughter loves meatballs so I had bought a bag of them. I also found this bag of pre-sliced sweet potatoes. We had a big frozen bag of "California" veggies. (I don't really know why they're called that, but whatever). The only thing I had to chop up was the onion. I love the variety of vegetables you can toss onto a sheet pan so you end up with a very colorful meal! Plus, vegetables taste better roasted or grilled. Drizzle everything in olive oil. Sprinkle on some salt, pepper, rosemary, and sage and pop it in the oven! You can't go wrong! We gobbled down this tasty sweet potato and meatball sheet pan meal, and I know your family will love it too! Sweet Potato and Meatball Sheet Pan MealIngredients:1/4 bag Caulipower Sweet PotaTOASTs 2 servings frozen meatballs 2 servings frozen vegetables of your choice (I used broccoli, cauliflower, and carrot) 1/4 purple onion, chopped 1 TBSP Olive Oil salt pepper rosemary sage garlic (Use these seasonings at your own discretion) Directions:
1. Preheat oven to 400 degrees Fahrenheit
2. Spread meatballs, sweet potatoes, and vegetables over pan. 3. Drizzle with olive oil 4. Season with all the seasonings distributed evenly. 5. Bake for 15 minutes. Voila! The other day, I was looking through some old recipes and I found this Apple Salmon Bake that I had forgotten all about and I haven't made it in years! I decided that for a change of pace I would give it a try. It was delicious and I'm so glad that I rediscovered it! This recipe can also be made with a blend of apples and pears, but I didn't have any pears at the time. Also, the recipe calls for peeling the apples, but I left the skin on and the apples looked beautiful and tasted great. So, you can peel them or not. I have a fondness for fondue dinners. It all started back when my husband was stationed in Germany and we went to a church party at a Major's home, who was a member or our congregation. They had a really nice quarters, and they hosted this fondue party. It was so much fun. There were several kinds of fondue, a large assortment of things to dip, plus other appetizers. We all walked around the table multiple times just talking and eating as we stood for a while, and then filling our plates and talking and enjoying ourselves even more. That party was the perfect mix of food and people. I have tried to replicate it, but haven't really come close. But, my love of fondue, partly because of my memory of that party, has not waned.
Now that school is back in for many, a special fun dinner is just the ticket for a family to de-stress and just enjoy some time together. Maybe you can create a long lasting memory of your own. Fondue is fun with a lot of people enjoying it, and also just for 2 or 3! Maddy is vegan, so she won't be eating the cheese and chocolate fondues with my husband and I tonight, but she can join in with many of the dippers and use some vegan dressings as a dip. There are always options. For a family get together, a great idea is to have a larger variety of fondues and assign lots of things to dip. I like to give everyone a little cup to hold their fondue in on their plate, instead of them doing multiple dippings back into the pot. That protects everyone from double dippers! If you don't have enough fondue forks, you can use skewers or just regular forks.
I know that the word "fondue" might sound intimidating, but it means "melted" and virtually everything goes! You can use many different kinds of cheese, hot oil for cooking thin cuts of meat right in the pot, savory sauces, like a marinara. For dessert, chocolate is always a favorite, but you can do caramel or marshmallow and for dippers you are only limited by your imagination.
I am sharing 2 recipes with you today. One is a main course or even an appetizer. The other is a dessert.
First, a goat cheese fondue that you will love!
For dipping I simply used things I already had on hand, pan grilled chicken chunks, zucchini, carrots, french bread. You could also use crackers, peppers and any veggies you would like.
For dessert, Chocolate Fondue! This recipe whips up in no time.
