Did you realize that this is national peanut month? When I think of peanuts, I think of peanut butter and when I think of peanut butter, I think of our family's favorite fudge recipe, Florida Fudge!
I shared the recipe for Florida Fudge with you a couple of year ago on this post. It is a popular Christmas treat around here.
The traditional way to serve Florida Fudge is to scoop it out onto waxed paper.
But, with Spring on the way, I decided to Easter it up a bit!
First, I used a dome mold and made little rounded fudge shapes and decorated them simply with buttercream andsprinkles. Next, I simply spread the fudge in a pan and layered on the springtime sprinkles! I think both ways are super cute and would look great in any Easter Basket!
*No matter how many times I try to make that recipe say "3 Extra Large Tablespoons Peanut Butter", it changes to Extra Large Peanut butter. So, I hope you realize it means 3 heaping, really large spoonsful of peanut butter!

How is your social distancing and quarantine going? It’s an unprecedented time in our lives, and with Easter coming up it can feel a little sad that we won’t be meeting with our church congregations and family. It can be especially sad for the grandparents that won’t be able to be near their grandchildren. That was our inspiration for these Easter coloring pages/cards. Kids can color the Easter pictures and then write a note or letter to their grandparents on the back or front. Then just put them in the mail to your loved ones. If you have a child who prefers writing to coloring one of the pages is setup for an Easter acrostic poem! Because, on the third day, Jesus Christ, the Savior of the World, overcame death and rose again. And, on Easter Sunday, that is what we celebrate! This year I did follow along with #BecauseOfHim as we went through this Holy Week in the Savior's life. I hope that it added to the Spirit of your Easter this year! We hope that you all have a wonderful time with your family and friends this holiday and are able to ponder the impact the Savior has made in your lives! I am so excited to be hosting an Easter Brunch this year at our house! Traditionally, we have had a big Easter Dinner, but in order to accommodate everyone's schedules this year, everyone is going to attend church with us and then come back to our house afterwards for brunch! There should be about 18 of us, including children. That is a lot for our small house, but we have done that before. But, coming up with a menu and how I want to decorate has been the things I have struggled with. Today I will talk about the food and save the decorating for another day.
When I think of brunch, I think of food items that can translate to breakfast or lunch. They shouldn't be too heavy and everything should look beautiful and appetizing! I also have had to consider many types of diets with so many people. I have come up with a mixture of home cooked and also purchased items that I think will provide choices for everyone that they will enjoy and that will make everyone feel like this brunch satisfied their Easter holiday food expectations. I hope that you can find some ideas to add to your menu! These could also translate to a Mother's Day Brunch as well!

The nice thing about all of these foods is that they can be eaten without bread by those who are gluten-free or low-carb eaters, or with crackers! Of course, there will be condiments on the side as well, like mayo, mustard, ranch and Italian dressings, salt, pepper...you know.

The Plan!
My plan is to shop and cook so that everything is finished and ready to put out the day before. I will also set and decorate my tables. The platters for food will be out and ready to fill. Then, when we get home, it will be easy to pop everything onto the platters and serve! We will serve buffet style around our kitchen island and counters.
