This is my second post admitting a mistake this week. I'm on a roll, so I might as well get it over with.
A couple of months ago,I made yogurt using my crock pot. I had intended to try making it in my Instant Pot, but my Instant Pot doesn't have a yogurt button. I searched the web a bit and found people saying that the Instant Pot Lux doesn't have a yogurt button and so you cannot make yogurt in it.
Flash forward to March and I want to make yogurt again. I just happened to be making dinner in my Instant Pot one evening and I was flipping through the little recipe book that comes with the Instant Pot. Guess what is in there? That's right, a recipe for yogurt! I was dumbfounded! Of course, me, being me, I had to try it but do things a little differently.
Actually, the only thing the Instant Pot was used for in this recipe was to keep the yogurt mixture warm for the 9-10 hours that it has to sit. You simply put 4 cups of water in the pot, close the lid and heat it up with the Keep Warm setting. Let it heat for about 15 minutes. When you are ready to pour in the yogurt, you pour out the water, then add the yogurt. Close the lid and then come back 9 or 10 hours later to find yogurt. I don't understand what the big deal is about having a yogurt button! This is pretty much just how I did it with my crock pot, except I wrapped it in a towel to keep the heat in. So, I was wrong, you can make yogurt in your Instant Pot Lux. But, don't rely on the recipe in the little cookbook. Go to my recipe for using the crock pot here and adapt it to your Instant Pot. If you don't want to make a large batch, the Instant Pot might be the way to go. Either way, make your yogurt making life easier by getting yourself a yogurt strainer! You will love it, and the yogurt!

I got so excited thinking about all of the things that I can use this strainer for and for all of the things that I can do with the yogurt. Unfortunately, I discovered that my Instant Pot Lux does not have the yogurt setting. But, I knew that before there were Instant Pots, people still made yogurt. So, my search began for a way that I could make yogurt without an Instant Pot. I found many ways! I used a combination of those ideas and experimented on my own, as is my way. Guess what! My very first experiment was a great success and it was so easy that I can't believe that I haven't been making my own yogurt all along! I made a video of myself making my very first batch of homemade yogurt! Watch it, and then I will list some highlights to help you make your own yogurt without an Instant Pot as well! (Source info from Healthline) Learning all of this about the benefits of these fruits inspired me to come up with this Blueberry/Lemonade drink to give my husband and I a boost as we were working on projects around our house! I had seen a recipe from my friend and Doterra consultant for a morning detox drink containing warm water, lemon oil and honey. It seemed like a great idea, but I didn't want a warm drink and I thought about the blueberries in my fridge and decided to make a Blueberry Lemonade using my lemon essential oils. It came out pretty good, but since then, I tweaked it and it is even better now. Drinking that cool and refreshing drink, knowing that everything in it was good for me felt so good after working hard all morning and gave me a boost for the rest of the day! Essential Oils I generally use essential oils topically and as aroma therapy. There are very few that I feel comfortable ingesting, but lemon is one that I trust. If you feel uncomfortable using the essential oil in this recipe, you can substitute the juice from one lemon and maybe some zest as well. Always store essential oils out of the reach of children. They are potent ingredients and need to be handled with care. Oils can burn skin and eyes and cause severe illness if ingested incorrectly. While I find oils to be a wonderful tool in my well being, it is important to learn about them and to know how to use them carefully. I am definitely not an expert but I value the expert advice that I have been learning from many sources. Always do your homework! So, here it is, my simple recipe for a Blueberry Lemonade De-Tox Refresher! Be sure to use a blender that is good at breaking up ice cubes! There you go! Super simple! Bottoms Up! *Just to be clear, Lemon essential oil comes from the skin of the lemon, so there will not be the added benefit of fiber in this smoothie when you use the essential oil. Some mornings you just want a delicious muffin, but when you think of all the work required and the time it takes you settle for your cereal again. Well I'm here to help because I have developed this recipe for a scrumptious and healthy muffin in a mug. This muffin is sugar free, gluten free and actually has two servings so you can share it with someone you love or save half for later.
Banana Oat 3-minute mug muffin
I was hesitant when I first tried this recipe because I'd never had a mug muffin before and I was basing my microwave version from a regular muffin recipe. But I'm happy to say it worked beautifully, and it was so easy. I think it would be easy enough for your kids to make themselves breakfast in the morning too. I also love that it is so fast, so even if you wake up late you can still have a delicious and nutritious breakfast. The chopped dates add the perfect amount of sweetness to the muffin and you can adjust the quantity to your liking.
I ground my own oat flour a couple weeks ago and used it for this recipe instead of all purpose. With the oat flour, the muffin tastes similar to bran muffins (which I love). The home ground oat flour makes this recipe gluten free! Grinding the flour was so easy with the grinder my parents got us for Christmas. I've used the oat flour in a few different recipes and I have loved it. If you don't have oat flour I think you could use all purpose flour and get a delicious muffin still, it probably won't have the bran like texture and flavor though.
I hope you can try this recipe and enjoy it like I have. I like to put some butter on my muffin right when it comes out of the microwave.
