Well, here we are in day 246 of quarantine (I'm not sure, but I think that's right) and the weather is warming up! Warm weather means I want to start making lemon dishes. Lemon says warm weather and sunshine doesn't it? When the weather is warm I just want that tart sweet tang of lemon in dessert form.
We had a few lemons that I needed to use up, and so I decided to make this delicious lemon pudding cake. I had a little baker helper with me.
She loved helping me juice the lemons. I also was trying to show her how to separate yolks from whites and on the first egg the yolk broke and a small amount got into the whites. No good! I tossed the yolk into the other bowl to use it for the custard, but I had to toss the egg white.
So I started again and I didn't want to have one random egg yolk left over so I threw it into the mix. It didn't hurt the recipe at all. So, I just thought you should know that even if you make a baking mistake it can still all work out. Also, don't you love her cute apron? My mom showed you how to make it here. If you have any extra lemons these lemon pudding cakes are the perfect way to use them! The lemon sponge topping is light and airy, and the lemon pudding underneath is creamy and tangy. It's a perfect taste sensation! Top your lemon pudding cakes with a sprinkling of powdered sugar, and fresh berries if you have any!

My car has a glitch in the starter switch. Sometimes, in warm weather, it won't make the proper connection to engage the ignition. It hadn't happened all winter, and I had kind of forgotten about it. But, on Saturday, Madalynn and I were getting ready to leave for home after having lunch with Lindsey and her PH. It hit 90 degrees on Saturday, while we were moving Lindsey, and that did the trick for my car. It wouldn't start. It just went, "click" and nothing happened. When this had happened in the past, Maddy and I have this weird little tradition of going off and getting something to eat. By the time we would get back to the car, it would start. In this case, we had just eaten. My son-in-law tried starting it, but nothing. He and Lindsey had to be somewhere to finish taking care of the move. I assured them all would be well and Maddy and I headed over to a bundt cake shop behind where we were parked. I thought, "I will pick up a cake for tonight's dessert since Lindsey and Austin are coming over for dinner." Well, it was a cute shop and the samples that we ate were delicious. But, a full sized cake was $40! We bought a couple mini sized bundts, went back out to the car and it started. Then I went home and baked a lemon bundt cake!
I actually made 2 cakes over the weekend, because I felt the first one just wasn't lemony enough. I was only using real lemon, no extract. So, it takes quite a bit of juice and zest to get the lemon flavor to come through. The second problem was I realized that I was out of baking powder half way through the cake and I wasn't going to risk taking my car to the store, so I had to get the rise a different way. (Can you tell that I have been watching "The Great British Bake-Off" on Netflix?") So, I ended up using a couple of different recipes, here and here, and blending them together into my own version of this Lemon Bundt Cake. Both cakes were very successful, even though the first wasn't as lemony, the texture and moistness were delicious. Everyone went back for seconds! I am so happy that I purchased a new bundt cake pan a while ago. Here is a similar one. Remember the blackberry bundt cake that I made? Bundt cakes really whip up pretty quickly!

This is lemon season, so of course there must be lemon desserts! I have already shown you Blackberry Lemon Bars, but today I wanted a stand alone lemon dessert. I was feeding 9 people for dinner today, but some people don't like lemon, so I made one chocolate pie for those guys. For the main dish, I served Chicken Enchilada Casserole, which I have shared the recipe with you before. That was a crock pot version, but because I needed more than my crock pot would serve, I made it in the oven today. Everyone loved it, but the lemon dessert was the stand out, hands down most delicious and simple thing to make success! I found the recipe on Taste and Tell, and as I made it, I realized that it is the same as a recipe my son brought home from Brazil called Pavé. The main difference is that he made his in a 9 x 13 pan and this one is a pretty round pie. Whatever the shape, you should try it, it is so good. The main ingredients are sweetened condensed milk, cream cheese and lemon. You will love it.
Of course, I needed some whipped cream to decorate the pie. Madalynn went to Sprouts to buy me the cream because she likes to buy organic. Oh my goodness you guys! Do you see this cute bottle that Straus' cream comes in? My mind is racing with ideas about what to do with these little pint sized bottles! We may be eating a lot of whipped cream for a little while so that I can collect more of them.
Madalynn says that they also have bottles like these for chocolate milk and other products. So, we are going to have to try a few of those products now that I know that they exist. The quality of this cream is superb. I haven't tasted cream this fresh and good for years. This is not an affiliate post, I just really liked this cream, as well as the container. I am going to write them and tell them.
Finally, you may remember that my job at church is to teach music to the Primary children ages 18 months to 11 years of age. (Not all at the same time!) During the month of February, I have been teaching them our family's favorite hymn, "Choose the Right". We are working on the last verse tomorrow. The beginning line goes:
"Choose the right, there is peace in righteous doing. Choose the right, there's safety for the soul..." (LDS Hymns, pg 239)
, That first line is a big part of my faith and testimony. I know that our Heavenly Father has given us commandments to help us to be happy or even better, to have joy! When we keep those commandments and try to live the way we should, we will experience happiness and joy in our lives. We will avoid the things that will bring us into bondage and we can rise above our problems through faith in him. I have put this to the test and I know it is true. So, because I feel so strongly about this, as I explain to the children what those words in the hymn mean, I want them to feel my testimony and to develop their own. So, I made them these dove handouts to take home and hang somewhere as a reminder of the blessings that can come when we choose the right. I have a dear friend who has a tree that is loaded with lemons and she lets me grab some whenever I need a couple. This past week, blackberries were on sale again and I picked up quite a few. As you know, I love the combination of blackberries and lemons. In the past, I came up with a Blackberry-Lemon Marmalade that is so delicious that if you haven't tried it, you should. This time I came up with the idea of putting together lemons and blackberries into a twist on the traditional lemon bar. As you can see, they came out so lovely with a tart sweetness that everyone enjoyed. The color would make them a pretty Valentine's Day treat as well! Here is the recipe! A couple of Fridays ago, I shared on Friday Faves that I love my new zester! I still do! (Here is one like it.) I also love this new little juicer that I got from a Princess House Party recently. It allows you to measure the juice as you juice it. Also, the reamer is removable, so it is very easy to clean. I couldn't find it on Amazon, but there are similar ones here and here. This type of juicer comes in handy when you only have a couple of lemons to juice and you don't want to pull out the electric juicer. If I don't need to measure, I use the citrus squeezer, but this kind with the reamer is great when you need to measure a specific amount of juice. This recipe calls for the juice of 1 lemon. But, since lemon sizes vary so much, (these were huge!), you should measure. This recipe needs about 5 T. of lemon juice, along with the juice of the blackberries. When you mash the berries through the sieve, be sure to reserve some for the garnish. That means you will only mash about 2/3 of the container. When the pan came out of the oven and after it had cooled a bit, I sprinkled on confectioners sugar, a little more zest and added some blackberries. These were so good and easy to make. A good use of lemons if you are experiencing an over abundance! Hope you try them and enjoy!
