We can't get through February without recognizing that it is National Cherry Month! It goes hand in hand with President's Day, right? (You know, the old story about George Washington and his father's cherry tree?) We have shared lots of great cherry recipes with you in the past which I will link to below, but rather than do a new round-up of those, I thought that this year deserved a totally new recipe that we've never done before.
I remember as a teenager going to IHOP and ordering Cherry Cheese Blintzes. They were all the rage and so good! There is just something great about cream cheese and cherries mixed together. (Think Cherry Cheesecake!) For some reason that memory came back to me recently and I decided to make some and share them with you for this year's cherry feature!

I posted this Valentine's day post a few years back, right after giving birth to my oldest daughter, who just turned 5 in December! I can't believe it is already 2023! Yesterday we celebrated our sweet son Henry's birthday.
For some reason, Valentine's Day has been on my mind already, I want to make it extra special this year. Valentine's Day is generally not my thing, but this year I don't want to focus on romantic love (although I am married and Valentine's Day is also my husband's birthday, so there will be some romance) but just the importance of loving others in general. Food is definitely a love language. In this post I listed seven great recipes for you to try out on Valentine's day (or maybe the lead up to it) including some great cocoa bomb ideas! It is PH's birthday, so of course we'll be celebrating that! But now we have a little one, and family will be in town to celebrate her because on the 18th she will be blessed at our church. (I guess a blessing is sort of like a christening, but there is no water. Is there water at a christening? I think so. a blessing is when the father, or another worthy priesthood holder, holds the baby and gives her a name and then blesses her with whatever Heavenly Father tells him to bless her with. In a nutshell.) Alicia will be here and her son's birthday is the 13th and he'll be turning 3! Our nephew Hunter is also here and he'll be 3 on the 20th! So with all this busy family time, we'll probably want to be using some of these great recipes ourselves! Happy Valentine's Day!

I'm finally getting down to the last of my pears! I don't know how Lindsey is doing on hers, but she is going to share a recipe with you next week. But, here is one last pear recipe from me!
A few days ago, I was watching a cooking show where someone made a pear pie! Since I have had pears coming out of my ears of late, I of course latched onto that idea! I figured it couldn't be that hard, and guess what! It wasn't! You Kind of Treat the Pears Like Apples, Yet Differently
My pears had reached their peak ripeness! They were so juicy and sweet. I had to handle them gently so I wouldn't bruise them. They were not crisp like an apple at all.
I used my vegetable peeler to remove the skin of the pears. Then, I quartered them, removed the cores and sliced them into a bowl. I made the slices sort of thick so that they would hold up in the oven. Next, I tossed the pears with the corn starch, sugar and spices very gently. Then, I put them into the pie crust. Easy as that. I didn't cook the pie filling in advance because the pears were already so soft that I didn't want them to get mushy. They started creating their own juicy sauce right away. That sauce thickened in the pie perfectly in the oven.
I used my standby pie crust recipe, except I used buttery flavored Crisco. After I rolled out the top crust, I cut some leaf shapes into it before placing it on the pie, instead of cutting in the normal slits.
Once the pie is baked, just plop on a scoop of ice cream and enjoy it warm and delicious!

Our family is going on a week long cabin trip together soon. One of the nights of our reunion we are going to have a chili cook-off! That sounds like a lot of fun, except my husband and I really cannot handle very spicy food. My husband has been especially sensitive to it since he had Covid 19. So, of course, I am joining the cook-off so that I can make sure that at least one of the chilies will be mild enough for our taste!
I decided that the easiest way to make the chili without having to do a long process while on vacation would be to make it at home and can it! So, that is just what I did! I came up with the recipe in my head, made a huge pot of chili for dinner one night and then just canned the rest of it, processing in my pressure canner. Overall, it was even easier than I had imagined. (I had never canned chili before.) |
