I promised you this recipe a few weeks ago. Today I popped open a jar of this apple butter to have on my toast and it was so good, I had to make good on my promise and share it with you! I can hardly get enough of this stuff and it was so easy to do because the Steam Juicer does most of the work for you! As I explained on this post, I had apples to juice and I sliced them up and put them into the steam juicer. When the process of extracting the juice was complete, I was left with a steamer full of cooked, mushy apples. When I had put them into the juicer, I had merely cored and sliced them with my hand apple slicer and threw them into the juicer, skin and all. Then, I turned on the steam juicer and let it do its work. After the juice stopped flowing, the left over pulp looked like cooked apples, still in their pre-sliced state. I knew that I couldn't waste all of that apple goodness. Using the steam canner to start cooking them had saved me a lot of time as far as having to cook the apples for hours. With the skins on, you will want to mash these apples with some device to make the texture of the apple butter appealing. I used an immersion blender and the texture is acceptable to me and my family, but some of you may get a better result if you use a blender or a food processor. I used a large saucepan to blend my apple pulp in until it was smooth and then I added the rest of the ingredients. It is important to bring the mixture to a boil and let it simmer for just a bit to make sure that the sugar is dissolved and the natural pectin in the apples is making it nice and thick. It didn't take very long for mine to get thick. If it seems too thick, add back a little apple juice to loosen it up. Here is the recipe. If you click on it, you will get the printable version. The ginger in this recipe gives it such a great taste. I absolutely love it more than any apple butter I have ever made. It has such a delicious, fresh apple taste and it is just so flavorful!
