Just the words Molten Lava Cake make me want one, even if I'm not hungry. The idea of that creamy warm chocolate, flowing out of a moist chocolate cake sets my makes my mouth start to water.
Unfortunately, I rarely allow myself to eat one because I know that they are not the healthiest things in the world for me. Then, I heard about a Molten Zucchini Cake and realized that if I made a Molten Lava Cake in a healthier way, I could enjoy the chocolatey goodness way more often! Plus, there is a bonus! This cake is a great way to use up the zucchini from your garden! Here are more great reasons why it is okay to eat this cake:

In my last post, I shared my first experience making yogurt. One of the great things about making yogurt is that you can use it for so many things. One of the things that I wanted to do first was to make cream cheese from the yogurt and make a cheesecake. Just like making the yogurt, turning it into a cream cheese substitute is very easy.
The first thing that you have to do is drain the yogurt until it is much thicker than the yogurt that you would normally eat. Since I needed about 2 cups of cream cheese for my cheesecake, I measured out about 2.5 cups of yogurt into a clean flour sack towel and put it into a strainer sitting over a bowl. The bowl will catch the extra whey that will drain out. Leave the yogurt to drain in the refrigerator over night. You could also use your regular yogurt strainer. I didn't because my yogurt amount was so small that I could take up less room in my fridge by using a smaller bowl and strainer.
When your yogurt is finished draining, it will look like this. Next you use it just like cream cheese and make your recipe as you normally would.
I decided to make a Lemon Blackberry Cheesecake by baking the lemon cheesecake base and then topping it with a stabilized blackberry whipped cream. I used lemon oil and lemon zest to flavor the lemon cream cheese base. It came out pretty awesome. Here is the recipe:

You may have noticed that our last post was about our favorite pumpkin recipes, celebrating Lindsey's birthday. Well, the day after Lindsey's birthday is Madalynn's birthday! As a matter of fact, all of my daughter's birthdays are in the same month! If I had thought of this idea sooner, I would have done a pizza post for Alicia, since she loves pizza. (Sorry Alicia, maybe next year!) But, just in time for Maddy's birthday, I decided to share our favorite vegan recipes. Most of these recipes are ones that we have posted in our efforts to make sure that Madalynn gets to eat at our family events. But, there are also some recipes included from other bloggers who Maddy follows. As I began finding ways to add vegan options to my repertoire, I was pleasantly surprised at how easy it is to convert regular recipes to make them vegan and also, at how many of our recipes are vegan already! So, here goes! The first few are savory and then we tend to have a bunch of desserts ;) Alicia's recipe for Easy Fresh Salsa is as vegan as it gets! She roasts her veggies before making the salsa, which adds a deeper flavor with a bit of char. This salsa is always a hit a parties! Lindsey shared this Vegan Taco Salad recipe and trust me, you don't miss the meat! Some of the meat substitutes out there are very tasty! It looks like we have a Mexican Food theme here! These Vegan Refried Beans would go great with the salsa and the salad! These Vegan Chocolate Chocolate Chip Cookies are one of the first vegan recipes Maddy posted and they were well received and for good reason! They are delicious! The sweet thing about these cookies, besides the cookies themselves, is that Lindsey doesn't even like cashews! But she made them for her aunt and her sister. These Magic Vegan Cashew Cookies Bars are something you've got to try! Madalynn came up with the recipe for these Cookie Dough Brownies because of a need she saw in the world! She is a giver! You're welcome. Since this list is in honor of Maddy's birthday, of course I had to include this Vegan Chocolate Cake that is perfect for the vegan in your life's birthday, too! No one will be able to tell it is vegan. Last Christmas Season, we did recipes for The 12 Days of Christmas. Maddy made these Vegan Churro Bites With Peppermint Chocolate Sauce for the eleventh day. They are amazing little nuggets of holiday flavor! (There are links to the rest of the days of Christmas, too, if you want to check those out. ) Maddy makes a delicious Cranberry Sauce that is a favorite of everyone's, not just those who eat vegan. The recipe for this Cranberry Sauce and other perfect Thanksgiving dishes are available for you at this post. There are recipes for soup, corn, mashed potatoes and apple pie, all vegan. I had to repost this recipe because I came across it the other day. This is hands down one of my favorite things that Lindsey makes! It is so delicious, totally a comfort food! If you haven't tried it, you're missing out! She originally posted it in 2017. It's time for another pumpkin recipe, and this one is one of my favorites!!! It seems to be a fall tradition to make chili around Halloween, I don't know if it's the same for you, but I highly recommend it. Our church does a trunk or treat every year, and no matter what ward (like a congregation) that we are in, there is always a chili cook off, and I always like to bring my pumpkin chili, because it is ridiculously delicious. It is also ridiculously easy. You grill the turkey meat beforehand and saute the onions. Then you dump everything in the crock pot and let it cook for a few hours and you get a delicious chili that you will feel like you can't eat enough of! Someday soon I will also share with you my favorite cornbread recipe, but for now, enjoy the chili.
