I purchased a produce combination box from my local wholesale produce supplier and among other great items, it contained 4 eggplant! I am not a real expert on cooking eggplant, I've only tried my hand at it a little bit. (Here is an eggplant lasagna I did a few YEARS ago!) But, I knew that Ratatouille is an eggplant dish. Two of my grandchildren actually sent me a video of themselves making it! For some reason that post never made it up here on the blog, but they are adorable and real Foodies at a young age! Thinking of these cuties made me think that I should give Ratatouille a try, but with a twist! My husband and I do like beef. (We recently purchased 1/2 a beef with Lindsey and her family!) So, not only did I want to use my eggplant, I wanted to use some of that delicious Montana beef! Also, I need to put a disclaimer out there, I've never actually tasted Ratatouille besides never having made it before! So, if you are looking for something very authentic, you are looking in the wrong place. But, if you want to use your eggplant in a tasty ratatouille-ish dish, and incorporate beef, then this recipe is for you. I did do a lot of research and tried to incorporate the seasonings and flavors used in the recipes I found.
Now that we are empty nesters, I still have the problem of making too much food for just my husband and myself. This recipe should feed us for the next couple of days. We aren't mad about it. Let me know if you give it a try! Or give these recipes a try:

This is the time of year when I sometimes crave a good baked potato. When the weather gets cooler, a nice hot baked potato can warm you up and feel like comfort food. Sometimes for dinner I'll put together a baked potato bar with a variety of toppings to satisfy my craving.
Baked Potato Bars can be an inexpensive way to feed a large group, especially if you make it a potato bar potluck affair. The host can provide the potatoes, butter, sour cream and salt and pepper and then ask everyone else to bring a topping. My mouth is watering just thinking about it. It is surprising to me that not everyone loves baked potatoes that well, and especially not with various toppings. Lindsey prefers a sweet potato and has always disapproved of baked potato bars. When I asked her for topping ideas, she suggested butter, salt and pepper. Not really what I was looking for, LOL. Luckily, Maddy and Alicia do enjoy baked potatoes and had plenty of ideas! So, I've compiled a list of ideas that you may not have thought about. Then, if you decide to host a Baked Potato Bar, perhaps you can enclose the list of ideas in your invitation to give your guests some options. I mean, it would be a less exciting event if everyone simply brought cheese.

Purchasing salmon for my salmon addiction has always been a splurge, but now I am finding myself saving up in order to pay the huge price and still be able to purchase the basics. Fortunately, and surprisingly, I can usually find a pretty good sale on shrimp. Some weeks, the sale will be on large shrimp, others, on medium. Salad shrimp or small shrimp are usually pretty affordable compared to other seafood in the supermarket. Since I adore shrimp, I find myself purchasing it more often to put into our menu rotation. Benefits of Eating Shrimp The great thing about eating shrimp is that it is very good for you! It contains vitamin B12 and other things like niacin and zinc. It is high in anti-oxidants that fight inflammation, wrinkles and sun damage. Shrimp is also good for thyroid function. Of course, you shouldn't overdo it with shrimp, they are fairly high in cholesterol and sodium, and of course, some people are allergic to shellfish, which is very sad for them. All of that being said, shrimp is great to have on hand because it cooks up quickly and that makes it easy to create a delicious dish in no time at all! Our family is going on a week long cabin trip together soon. One of the nights of our reunion we are going to have a chili cook-off! That sounds like a lot of fun, except my husband and I really cannot handle very spicy food. My husband has been especially sensitive to it since he had Covid 19. So, of course, I am joining the cook-off so that I can make sure that at least one of the chilies will be mild enough for our taste!
I decided that the easiest way to make the chili without having to do a long process while on vacation would be to make it at home and can it! So, that is just what I did! I came up with the recipe in my head, made a huge pot of chili for dinner one night and then just canned the rest of it, processing in my pressure canner. Overall, it was even easier than I had imagined. (I had never canned chili before.) |
